Beth: IA, United States; I had a breakthrough moment my junior year of college when I attempted to re-create an eggplant recipe from my favorite Chinese restaurant. My roommate took a bite and I watched as her eyes lit up and she danced around the kitchen exclaiming "I had no idea eggplant could taste like this!" Ever since then I've been trying out-of-the-ordinary preparations for foods I thought I knew, and eventually started experimenting with out-of-the-ordinary foods I had no idea what to do with.
